Recipe for Banana Fritters

A quick dessert

Serves 4-6

Ingredients

  • 225g (8oz) self-raising flour

  • 1 egg

  • 275ml (1/2pt) milk

  • 5-6 large ripe bananas, mashed

  • 110g (4oz) sugar

  • 1 tsp vanilla essence

  • Oil for frying

How to make them

  1. Sift the flour into a deep bowl. Make a well in the centre and add the egg. Beat gently into the flour; add the milk, a little at a time, to make a smooth batter.

  2. Add the mashed bananas, sugar and spices. Beat in well. Leave to rest for 10 minutes in the refrigerator.

  3. Heat the oil. Drop in spoonfuls of the mixture and fry for about 6-8 minutes on each side. Serve at once.

These fritters are delicious with ice cream!!
